Tennessee emerged as a favorite to land the four-star JUCO prospect after hiring new head coach Jeremy Pruitt earlier this month.
"I just believe in Coach Pruitt," Wood-Anderson told GoVols247 on Monday prior to announcing his decision two days later. "I feel like he's going to turn things around, and I wouldn't mind being a part of something like that."
Wood-Anderson ranks as the No. 1 tight end and No. 11 overall prospect for the 2018 JUCO national recruiting cycle, according to the 247Sports Composite.
The sophomore chose the Vols over Alabama and Texas A&M, having earned 23 total scholarship offers.
Wood-Anderson recorded an Arizona Community College Athletic Conference leading 31 receptions, along with 258 yards and two touchdowns in 2017, earning second-team National Junior College Athletic Association All-American honors.
Tennessee also signed three-star tight end Jacob Warren of nearby Farragut High School on Wednesday, proving more depth at the position following the departures of four-year starter Ethan Wolf and back-up Jakob Johnson.
