It turns out, it wasn't actually a Cowboys fan, but another Eagles fan, per Busted Coverage, that knocked his fellow fan out.

As if this story could take any other turns, TMZ points out the two are actually brothers, with the puncher getting arrested for misdemeanor assault and the punchee currently in the hospital spitting up blood. He'll be arrested on a felony assault charge after allegedly spitting blood at cops.
